Anita's favourite salad
This is my absolute favourite salad - I make it most days. The pumpkin seed oil makes this dish extra special.
The pumpkinseed oil gives this salad a unique flavor - it's a very nutty, rich and healthy oil that comes from Styria, Austria - where I come from.
Preparation time: 10 minutes
Serves: 4
Ingredients:
2 Persian cucumbers, diced
2 tomatoes, diced
½ red onion, diced
½ yellow capsicum, diced
½ red capsicum, diced
1 avocado, diced
6 radishes, diced
¼ cup roasted, unsalted sunflower seeds
4 cups mixed lettuce leaves (mixed baby greens)
2 tblsp pumpkinseed oil or extra-virgin olive oil
2 tblsp balsamic vinegar
Salt & pepper
Method:
Mix all the ingredients together and season with oil, vinegar, salt and pepper
