Apple Muffins
Made with whole wheat flour and sweetened with maple syrup - these muffins are not too sweet yet still very tasty!

Makes 12 muffins
Ingredients:
1¾ cups whole wheat flour
1½ teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon sea salt
1 large apple, grated with skin (Granny Smith work well, but any apple is fine)
1 large apple, diced with skin
⅓ cup organic virgin coconut oil or olive oil
½ cup organic maple syrup
2 organic eggs
1 cup unsweetened organic Greek yogurt (should have no more than 6 g sugar)
1 teaspoon vanilla extract
Method:
Preheat oven to 425 F (220 C).
Combine all the dry ingredients in a big bowl.
Stir in the grated and diced apple.
In a separate bowl, combine the coconut oil (you might have to heat it up a bit until it becomes liquid), maple syrup, eggs, yogurt and vanilla and mix well with a whisk.
Pour the wet ingredients into the dry and mix until combined. Don’t overmix.
Divide the batter between the 12 muffin cups.
If you like you can sprinkle a little bit of sugar over the tops of the muffins (optional).
Bake for about 15 minutes, or until the muffins are nicely browned.
