Baking: 15 minutes

Makes 12 muffins

Ingredients:

  • 1¾ cups whole wheat flour

  • 1½ teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • ½ teaspoon baking soda

  • ½ teaspoon sea salt

  • 1 large apple, grated with skin (Granny Smith work well, but any apple is fine)

  • 1 large apple, diced with skin

  • ⅓ cup organic virgin coconut oil or olive oil

  • ½ cup organic maple syrup

  • 2 organic eggs

  • 1 cup unsweetened organic Greek yogurt (should have no more than 6 g sugar)

  • 1 teaspoon vanilla extract

Method:

  • Preheat oven to 425 F (220 C).

  • Combine all the dry ingredients in a big bowl.

  • Stir in the grated and diced apple.

  • In a separate bowl, combine the coconut oil (you might have to heat it up a bit until it becomes liquid), maple syrup, eggs, yogurt and vanilla and mix well with a whisk.

  • Pour the wet ingredients into the dry and mix until combined. Don’t overmix.

  • Divide the batter between the 12 muffin cups.

  • If you like you can sprinkle a little bit of sugar over the tops of the muffins (optional).

  • Bake for about 15 minutes, or until the muffins are nicely browned.
