Banana & Peanut Butter Fudge

My husbands favourite treat - not too sweet, but  gooey and very tasty! Another perfect gluten-free dessert.

Banana & Peanut Butter Fudge

Preparation: 10 minutes (plus at least 1 hour in the freezer)

Makes: 20 pieces


Ingredients:


  • 3 tablespoons unrefined coconut oil

  • 3 tablespoons peanut butter

  • 3 tablespoons maple syrup

  • 2 bananas

  • 2 tablespoons cocoa powder

  • pinch of sea salt

  • 1 teaspoon vanilla extract

  • 1 teaspoon lemon juice

  • coconut chips and pistachios for garnish


Method:


  • Combine the coconut oil, peanut butter and maple syrup in a bowl and gently heat up until the coconut oil is melted.

  • Mash the bananas really well and add them to the coconut oil mix.

  • Add the cocoa powder, salt, vanilla and lemon juice and mix all together.

  • Pour the mixture into a small dish (11 cm by 15 cm) lined with baking paper.

  • Sprinkle with the coconut chips and pistachios

  • Freeze for at least 1 hour.

  • Cut into 20 pieces. You can store it in the freezer for about a month.
