Banana Cake

Quick and easy to make. It keeps for a couple of days or you can freeze it.

Banana Cake

Preparation: 10 minutes

Cooking time: 60 minutes

Serves: 10


Ingredients:


  • 3-4 small ripe bananas

  • 50 g organic butter, unsalted

  • 2 tablespoon organic plain yogurt (check that the sugar content is not higher the 7 g)

  • 1 organic egg

  • 1 ½ cup almond meal

  • 3 tablespoon organic unbleached flour

  • 1 ½ tsp baking powder

  • 1 teaspoon bicarbonate of soda

  • 2 tablespoon organic unsweetened finely shredded coconut

  • 2 teaspoon honey


Method:


  • Mash the bananas in a big bowl.

  • Melt the butter and add to the mashed bananas.

  • Add all the other ingredients and mix with a spoon to combine.

  • Fill the mixture into a lightly oiled cake tin

  • Bake at 330 F (165 C) for about 60 minutes or until a skewer inserted comes out clean.
