No Bake Flourless Brownies
Gluten free healthy treat. Made with walnuts and dates. No baking required.
Preparation: 15 minutes
Makes about 16 pieces
Ingredients:
2 cups walnuts
1 cup organic raw cacao powder
2 tablespoons flax seeds, ground
2 teaspoons cinnamon
½ teaspoon sea salt
2 ½ cups dates, pitted
Topping:
¼ cup unrefined virgin coconut oil, melted
2 tablespoons organic maple syrup
¼ cup organic raw cacao powder
½ teaspoon sea salt
Method:
If you are using whole flax seeds, ground them in a grinder (I use a small coffee grinder). Alternatively, you can use flax seed meal.
Add the walnuts, cacao powder, ground flax seeds, cinnamon and salt to a food processor and pulse until fine.
Add the pitted dates (if they are quite dry, soak them in hot water for about 15 minutes first) and pulse until combined.
Line a small container with parchment paper and press the mixture into it.
In a small bowl, mix together all the topping ingredients and pour over the brownie mixture.
Put in the freezer for 5 – 10 minutes to set.
Take out and cut into squares.
